Since so many people said the corn we served at the Newburgh Yacht Club Lobster Fest was the best corn they had eaten all summer, I thought I write a post about it.
For the last few years we’ve been getting the corn from the same farm and this year was no different. The folks at the Pine Hill Farm on Route 94 just north of the Village of Chester picked the corn for us the morning of the event. They had the 300 ears packed into 6 crates ready to go. Opps, these crates wouldn’t fit in my car. So while Julia who works at the farm lined the bottom of our trunk with cardboard my wife Ellen and I spoke with her grandfather the head farmer, Ed, also known as, ‘Ol Popy”. He explained the secret of good corn is all in the preparation of the soil. The extra work he puts into it is paying off based on the comments from our guests on how good the corn tastes.
Once the car’s trunk was lined with cardboard in went the 300 ears of corn. Loaded down we were off to the yacht club.
I pulled up next to our outdoor cooking area for the Lobster Fest and the great crew of yacht club members on hand for setting up and getting ready to serve lunch became corn huskers.
The corn looked good and tasted even better. It was an excellent accompaniment to those fresh Maine Lobsters that we served to more than 250 people later in the day. We’ll make that a separate post.
